Peaches and Cream Cheesecake Pops are a refreshing snack for a hot summer day; the cream cheese and yogurt give the popsicles some tang and complement the peaches well.  To change up this recipe substitute 1 ½ cups of any chopped fruit like strawberries or cherries.

5 oz. Organic Valley Cream Cheese, softened

1 ¼ cups plain yogurt

¼ cup maple syrup

2 ripe peaches, chopped ( about 1 1/2 cups)

1. To the bowl of a food process add cream cheese, yogurt, maple syrup, and 1/3 of chopped peaches. Pulse 5-10 times, or until no chunks remain.

2. Remove the blade and stir in remaining chopped peaches – taste for sweetness, add another Tablespoon of maple syrup if desired.

3. Pour evenly between popsicle molds (makes about 12 – 1/3 cup popsicles) and freeze for at least 4 hours before serving.
