If I had to pick a favorite meal to make for family, breakfast would be my pick hands down. When we have big family gatherings the dinners can sometimes get a little stressful. It’s a lot of work to get a holiday dinner on the table and even with my easy going family, I know I put too much pressure on myself to make everything completely perfect. I find breakfast to be so much more relaxed and fun to cook. I can usually do some prep in advance, and I love going down to the kitchen early when the house is quiet and starting to work on breakfast.

I’ve made several versions of this Blueberry Croissant Puff and have loved each and every variety. This version has fresh blueberries and lemon which is one of my all time favorite combos (see also, Blueberry Coffeecake!) and just screams spring to me. Subbing in fresh raspberries or blackberries is also delicious. This dish is unique, tasty, and easy to throw together. Fresh croissants are torn up and placed in a baking dish then topped with some fresh blueberries. A cream cheese mixture with lemon zest is poured over the top, allowed to soak for a few minutes, then baked and served warm. It would be a perfect dish for Easter, Mother’s Day, or just a random, sunny Saturday morning.

Cream Cheese Mixture

Instructions
  1. Combine the cream cheese, sugar, and lemon zest in the bowl of a mixer and stir until combined. Add the eggs one at a time, mixing until smooth. Stir in the vanilla then slowly pour in the milk.
  2. Place the croissant pieces in a 9 x 9 inch baking dish, then sprinkle the blueberries over the top. Pour the cream cheese mixture over the blueberries and set aside for at least 20 minutes to allow the croissants to soak up some of the cream cheese mixture.
  3. Bake at 350 degrees for 35-40 minutes until the center is set. Allow to cool for about 15 minutes before serving.
Recipe Notes

You can prepare the cream cheese mixture the night before and refrigerate it until morning.

Feel free to sub in different kinds of berries for the blueberries and to experiment with different types of citrus zest.
