Compound butter is just a fancy name for butter with added ingredients.  Savory compound butters are often filled with herbs and spices and  are paired with warm bread or served over grilled steak. Sweet compound butters may have maple syrup or fresh berries stirred in and are the perfect companion for warm waffles and muffins.  Compound butters are best made a day in advance, so if you’re hosting a dinner party this helps get one item of your prep list early.

Instructions
  1. Add one tablespoon of the softened butter to a small frying pan and sauté the green onions and garlic over medium-high for 2-3 minutes until lightly browned. Let cool for 5 minutes.
  2. Stir the sautéed green onions and garlic, thyme, lemon zest, salt, and pepper into the butter until evenly mixed.
  3. Scoop butter into a serving dish, cover tightly with plastic wrap and refrigerate for 24 hours, for best flavor development. Remove from the fridge at least 1 hour before serving.
