Tomato soup and grilled cheese is a comfort food pairing that I can get behind at any time of year. This creamy tomato basil soup is so delicious. You know how tomato soup can sometimes have that bitter ‘bite’ to it? This soup uses the natural sweetness of carrots to counteract that bitterness. I love both the flavor and the texture that the carrots add to the soup. The basil adds some flavor, and a splash of Organic Valley Heavy Cream makes it smooth and creamy.

I served this soup with a grilled cheese filled with Organic Valley Sharp Cheddar, some sliced apples, a few caramelized onions, and some additional fresh basil. The crunch of apples in the grilled cheese is one of my favorites. The grilled cheese is delicious all by itself, but it’s especially great if you dip it in the soup before taking a bite.

Creamy Tomato Soup
  1. Heat the butter in a large pot over medium-high heat until melted. Add the garlic, onion, and carrots and cook for about 5 minutes. Add the tomato paste and cook, stirring regularly, for another 2-3 minutes. Add the canned tomatoes, with their juice, and vegetable broth. Bring to a boil, then cover and simmer for 25 minutes.
  2. Remove from the heat and use an immersion blender to puree, leaving some chunks of tomatoes and carrots. Add the cream and basil. Salt and pepper to taste.
Fancy Grilled Cheese
  1. Heat a skillet over medium-low heat.
  2. Generously butter two slices of bread on one side. Place one piece of bread, with the buttered side down, on a cutting board. Arrange the sliced apples in a single layer on the bread, top with a few caramelized onions, some basil, and a layer of cheddar cheese. Top with the other piece of bread, with the buttered side facing up. Transfer to the warm skillet.
  3. Cover the skillet with a lid and let it cook for several minutes. Check occasionally to see if the cheese is beginning to melt and to make sure the bottom slice of bread isn't burning. Turn the heat down if the bread is browning before the cheese melts. Once the cheese is soft and melty, and the bottom piece of bread is toasted, gently flip the sandwich over to toast the other side of the sandwich.
  4. When both sides are toasted, remove from heat and cut the sandwich in half. Serve with a big bowl of soup.
